I am really thankful to have a mother-in-law like my mother-in-law! She is very thoughtful and loving and knows exactly what to do to make you fall in love with her!
There is just one thing; I think she thinks that I am starving her son to death. How did I come to that conclusion? Well you see, she keeps sending us food. Not food, she sends FOOOOOOOOOOOOOD!!!!
You know when you go to Costco and buy stuff in bulk? Imagine receiving bulk cooked food-we are only 2 at home- with no space in the freezer to store them because you see, we went to the store the day before and bought stuff for the whole week!
Long story short, we end up eating whatever was sent to us till the end of the month because, yes, she sent us FOOOOOD 2 days in a row!
Mind you, I have items in the fridge that are close to expiry and I’m not a fan of throwing food away! I had bought a 1kg bucket of plain yogurt and it was 2 days close to expiry so quick quick, what can I do with it? What to do?!!! I didn’t care that I still had food in the fridge, I wanted something different. I’d had my share of beans; My digestive system can only take so much!😷😷😷
Onto the search, trying to find a recipe that uses yogurt as a main ingredient and extras that I might actually have in my cupboard!
And the winner is…. 🎺🎺🎺 tatatataaaaaaaaaaaaaaaaaaaaaa 🎺🎺🎺
CHICKEN CURRY!! 🎊🎊🎊
Grab your notebooks, here we go.
METHOD OF PREPARATION:
2 chicken breasts cubed.
1/2 a teaspoon of coconut oil
Toss in the chicken and cook it enough to get the juices out.
Remove the chicken from the pot and set aside.
Chop 2 small onions and 3 garlic cloves and add them to the pot.
Keep cooking until the onions turn transparent.
Add a can of mushrooms
1/4 teaspoon salt
1/4 teaspoon cumin
1/4 teaspoon turmeric
1/2 teaspoon curry powder
Top it off with a can of mixed veggies and 1cube of chicken stock.
Remember the chicken that you put aside at the beginning of the recipe? hope your cat didn’t have its way with it because it is time to bring it back. Add to that 1 teaspoon of dijon mustard and give it a little mix.
Final step, the star of this recipe, the reason behind this entire dish, THE YOGURT!
Empty the bucket in the pot and stir until the yogurt turns yellow. Cover and let it simmer for about 10 min.
Pasta, rice or steamed potatoes would go perfectly with this dish. In my case, rice it is!
Reward yourself with a glass of white wine. You deserve it!
